In 2012, Sandeep and Kshama Patel asked a question every South Asian family had felt but few had acted on — why had flour stopped tasting like flour? That question became a decade-long journey to bring freshly milled grain back to Canadian kitchens.

The origin

A memory that became a mission

For Puremill, it began in 2012 around a dinner table in Canada. Sandeep and Kshama Patel — a husband-and-wife team originally from India — found themselves asking a question that many families had felt but rarely voiced.

"Why aren't our rotis as soft as they used to be? Why don't they have the same aroma and taste we remember growing up with?"

The packaged flour they were using felt different. The rotis lacked the warmth, fragrance, and satisfaction they had known all their lives. Most people would have accepted it and moved on. They didn't.

Sandeep, with his background in Software and Information Technology, brought analytical curiosity — an endless drive to understand how things work. Kshama, an entrepreneur and jewellery store owner, brought resilience, patience, and an uncompromising commitment to quality. Together, they imported a small flour mill from India and began milling flour in their own home.

Their evenings became research sessions. Their weekends became experiments. Their kitchen became a laboratory. They studied grains, compared wheat varieties, and discovered something remarkable: commercially packaged flour often loses much of its natural aroma, freshness, and vitality long before it reaches the kitchen.

Their search eventually led them to Organic Kamut Wheat, an ancient grain celebrated for its exceptional flavour. The aroma of freshly milled flour filled their home. The rotis once again tasted like the food they remembered from childhood. That realisation changed everything.

He built Swadesh Supermarket into a trusted community pillar across Ontario before installing the first cold-stone mill that became the foundation of Puremill.

What cold-stone milling means — and why it matters

The whole grain, nothing removed

Industrial roller milling separates wheat into bran, germ, and endosperm — removing the very parts that contain most of its vitamins, minerals, and fibre. Cold stone milling grinds the entire grain together, intact. What you receive is the whole grain in powder form — the way flour has been made for thousands of years.

Temperature is everything

High-speed steel rollers generate heat above 80°C during industrial milling. B vitamins degrade at 40°C. Natural wheat-germ oil oxidises rapidly under heat. Cold stone mills rotate slowly, keeping grain below 40°C throughout — preserving nutrients, oils, and aroma that would otherwise be destroyed before the flour reaches your kitchen.

A bag of commercial flour can sit in a warehouse for twelve months before reaching your shelf. Every bag of Puremill flour is milled after your order is placed. The short shelf life — 2 to 3 weeks — is not a limitation. It is proof that the oils and germ are still alive, still nourishing, still real.

Rooted in community

Puremill and Swadesh — one family, one mission

In 2018, Sandeep and Kshama acquired a rundown supermarket in Stoney Creek and transformed it into Swadesh Supermarket. At the back of the store stood a small flour mill — not a factory, not a grand business venture, but two people carrying forward an idea that had started in their kitchen.

Customers experienced freshly milled flour for the first time. They noticed the aroma. They noticed the freshness. For many, it reminded them of home. The response was overwhelming.

By 2020 they opened their second location in Hamilton, and in 2022 expanded to Burlington — each store with its own in-store mill. Today, every Puremill flour is milled inside a Swadesh Supermarket. The mill is not hidden in a factory. It is in the store, visible, working, and part of the community.

From a dinner table question to thousands of families

    A question that changed everything
    It started with a roti
    Sandeep and Kshama Patel asked a simple question at their dinner table: "Why aren't our rotis as soft, fragrant, and satisfying as they used to be?" What started as a conversation became the beginning of a journey to understand food, freshness, and nutrition.

    The research begins
    A mill in the kitchen
    Determined to find answers, they imported a small flour mill from India and began milling at home. Their evenings became research sessions. They studied grains, compared wheat varieties, and learned how processing and storage affect the aroma and taste of flour.

    Discovering ancient grains
    Organic Kamut Wheat
    Their search led them to ancient grains — particularly Organic Kamut Wheat. Softer rotis, richer aroma, and a taste that reminded them of home. For the first time, they experienced what food feels like when it remains close to nature.

    Living the philosophy
    Food is purest in its natural form
    For years they continued consuming freshly milled flour and sharing their experience with family and friends. These years strengthened a simple belief that would later become the foundation of Puremill.

    The first step toward a dream
    Swadesh Supermarket, Stoney Creek
    Driven by a desire to share fresh flour with others, they acquired a rundown supermarket in Stoney Creek and transformed it into Swadesh Supermarket. At the back of the store stood a small flour mill — what started in their kitchen was now being shared with the community.

    Building trust
    One family at a time
    Customers began experiencing freshly milled flour for the first time. The aroma and freshness reminded many of home. Families embraced the concept and became loyal supporters of the vision.
  • 2020
    Expanding to Hamilton
    Second Swadesh location
    Encouraged by the trust of the community, they opened their second Swadesh Supermarket in Hamilton with a new in-store flour mill, continuing the promise of freshly milled flour to more families.
  • 2022
    Expanding to Burlington
    Third location opens
    The third Swadesh Supermarket location opened in Burlington with the same in-store milling setup. By now, thousands of families had experienced the difference that freshly milled flour could make.
  • 2023
    The birth of Puremill
    A brand, a promise
    Years of research, learning, and community trust culminated in the creation of Puremill. One philosophy: select quality grains, mill them fresh, serve them in their purest form.
  • 2025onward
    A growing movement
    And this is only the beginning
    What began with one question about soft rotis has grown into a mission serving thousands of families across Ontario. Every milestone guided by one belief: when food stays close to nature, it nourishes us the way it was always meant to.

We will never switch to high-speed roller milling for the sake of volume. The cold stone process is the foundation everything else is built on. It is slower, more hands-on, and far better for the grain. That is exactly why we do it.

Puremill's organic range — including Organic Kamut Wheat Flour — is milled from certified organic grain. We are committed to expanding our organic selection, making genuinely clean grain accessible at fair prices.

Honest about shelf life

Fresh-milled flour lasts 2–3 weeks at room temperature, up to 2 months refrigerated. Short shelf life is a mark of quality, not a weakness, and we explain it clearly so every customer understands what they're buying.
